So everyone has their own holiday recipes.... I was going to post a few of my faves, but in an effort to simplify (code for I'm just too darn lazy to post too many and besides who will actually use them all) I'm only posting one.
This is my great-grandmother's recipe. There are variations of it out on the interwebs, but this is my favorite. One of the few holiday memories I have. I only make it at Thanksgiving and Christmas. Funny thing is, it was one of those foods that was crammed way back in my JW childhood memory banks. We would often go visit grandma during the holiday season, and even though she couldn't give us presents and we couldn't sing holiday songs and "Jesus did not die on a cross and what in the world did we have to be thankful for anyway because its a wicked world," I remember eating this as leftovers after all my sinning, non-JW family members had first dibs, and it was still absolutely delish.
Is it a dessert? Is it a side item to compliment the turkey? Who knows. But its FANTASTIC.
Enjoy.
Grandma Annie's Cranberry Salad
This makes A LOT!
Combine the following in a large bowl then set aside in the fridge:
1 lb. cranberries (1 bag) chopped in chopper (they chop better if you freeze them first)
4-5 stalks of celery, chopped
1 can crushed pineapple, with juice
1 c. sugar
1 c. walnuts, chopped
Meanwhile, while the above is set aside:
Add 3 cups of HOT water to two small (or one large) boxes of raspberry jell-o. Mix until gelatin is dissolved. Place in fridge.
When jell-o is thicker than water, but not quite set, add the cranberry mixture and mix well. The tricky part is keeping an eye on the jell-o so that it doesn't set completely before adding the other ingredients.
Let entire mixture set. Serve chilled.
Enjoy!
Happy Holidays!
